Morel Mushrooms – 200 grams

Bread – few slices

Chives – few pieces

Butter – 30 grams

Extra Virgin Olive Oil – 2 tablespoons

Tartine – French cuisine is an intriguing assemblage of sophisticated cuisine and country style cooking.  Visitors to France get a chance to try regional delicacies, incredible cheeses, refined desserts and colorful tartines.  A Tartine is an open sandwich made with a fresh crusty bread and diverse savory or sweet toppings.  Open-faced sandwiches are very popular in many parts of Europe, often served for breakfast, lunch or in an appetizer platter.  A classic French tartine is just bread with butter or jam, and evolves to include saucisson, jambon, cheese and vegetable toppings.  While visiting beautiful French villages, we eat a delicious savory tartine with sautéed mushrooms, shallots and parsley, flavored with cream and white wine.  Our Morel Tartine recipe celebrates the simplicity of French tartines, earthy savors of wild morels and wonderful aroma of fresh French bread.  Morels are an expensive delicacy, defined by earthy and musky flavor, brown or blonde colors and a honeycomb-like exterior texture.  Morels, an edible fungi, grow in diverse habitats, wild forests, forests burned by fire or in other natural environment.  The hunt for the elusive morels takes place in the spring, making the fresh morels available in upscale markets.  We select locally foraged fresh morels at the Pike Place Market in Seattle.  We visit the nearby Le Panier bakery to buy a crusty grains bread.  Our Morel Tartine is simple and delicious.

Preparation Method

Step 1 – Cut the morels in half, then sauté them with olive oil for around 5 minutes.  Afterward, add butter and a dash of salt.        

Step 2 – Slice the bread and finely chop the chives.

Step 3 – Place the sautéed morels on the bread, sprinkle chives and serve immediately.

Step 4 – Enjoy the wonderful flavors of Morel Tartine.
