Ingredients

Manila Clams – 24 medium size

European Smoked Bacon – 80 grams

Green Bell Pepper – 1/4 medium size

Red Bell Pepper – 1/4 medium size

White Onion – 1/4 medium size

Japanese Style Panko Bread Crumbs – 10 grams

Olive Oil – 4 tablespoons

Water – 2 cups (473ml)

Clams Casino – Clams Casino, invented in the state of Rhode Island, is a popular seafood appetizer in the United States.  Traditionally, Clams Casino comprise clams on the half shell, topped with onions, bacon and breadcrumbs, then baked in the oven.  A manifold of recipes is prepared with diverse clams, herbs and seasonings.  In our recipe, we use Manila Clams that have a tender texture and a distinct flavor.  The European Smoked Bacon, cured and smoked using traditional techniques, has a salty and robust flavor.  We select Japanese Style Panko Bread Crumbs that are made from a crustless white bread and processed into light and crispy flakes.  They can be purchased at Asian grocery markets in the USA.  Clams Casino is a timeless appetizer, simple to prepare and superbly delicious.

Preparation Method

Step 1 – Cut the bacon into thin slices and then into equal 1 inch by 1 inch pieces.  Chop finely the peppers and the onion.  In the skillet, sauté the vegetables in olive oil on medium heat for a few minutes, then set aside.

Step 2 – Place clams in a bowl and rinse under cold running water to remove any remaining particles and sand.

Step 3 – In a medium pot, add the water and bring to a boil.  Add the clams, cover the pot and cook for a few minutes until the clams open.  Place the clams onto a plate, remove the upper shells and loosen the clams from their shell.  Place the clams on half-shell in a round baking dish or on a baking sheet.

Step 4 – Spread an equal amount of vegetable mixture on each clam, covering them completely.  Sprinkle the breadcrumbs on top and then top each clam with a piece of bacon.

Step 5 – Preheat the oven to 400 degrees Fahrenheit.  Broil the clams for 10-15 minutes until the bacon pieces become slightly crispy.  Remove the Clams Casino from the oven and serve immediately.
