Ingredients

All Purpose Flour – 200 grams (7 ounces)

Sugar – 15 grams (0.5 ounces) 

Sour Cream – 100 grams (3.5 ounces)

Unsalted Butter – 30 grams (1 ounce)

Egg – 1 large

Baking Powder – 1 teaspoon

Quince Paste – 283 grams (10 ounces)

Quince Cookies – Cookies are a popular dessert enjoyed across the world.  A multitude of European cookie recipes are passed through generations.  The Madeleines, Macarons, Sablés Breton and Meringue Cookies are a few types of traditional French cookies.  Gingerbread Cookies, Kifle Walnut Cookies and jam-filled cookies are beloved desserts in Eastern Europe.  In my childhood, we made the crumbly cookies filled with fruit paste that we bought by weight at the delicatessen.  In this recipe, we use the Handmade Quince Paste (Membrillo Casero), a Mitica brand product of Valencia, Spain.  Cydonia Oblonga is a tree species that bears a quince fruit that has a golden yellow color and a high concentration of natural pectin.  The Quince Paste, a popular confection used in pastries, is a thick paste made of the pulp of the quince fruit.  Our Quince Cookies have a crumbly texture and a complementary tart-sweet fruit flavor.

Preparation Method

Step 1 – In a small bowl, whisk the egg with a hand whisk, then add the sour cream and whisk until the mixture has a smooth texture.  Sift the flour and baking powder through a fine mesh strainer into a large bowl.  Add the sugar, melted butter and the egg-sour cream mixture.  Mix all ingredients by hand and knead the dough into a uniform texture.

Step 2 – Roll out the dough into 1/8 inches (3 millimeters) thickness.  Cut the dough into long strips and then squares (2 inches x 2 inches).  Cut the quince paste into equal pieces (1 inch x 1/2 inch).  Place a piece of quince paste in the middle of each square of dough.  Take the squares’ two opposite corners and fold one corner on top of the other corner.  Pull the top corner to the side and slightly under the cookie to ensure the corners do not separate during baking.  Note: Our recipe makes around 40 cookies, hence divide the quince paste into 40 equal pieces.

Step 3 – Place the cookies on a non-stick baking sheet.  Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and bake the cookies for 20 minutes until they have a slightly golden color.

Step 4 – Enjoy the crumbly cookies with a flavorful quince paste.
