Ingredients

All Purpose Flour – 250 grams (8.8 ounces)

Frozen Unsalted Butter – 120 grams (4.2 ounces)

Free Range Egg – 1 large size

Sour Cream – 120 grams (4.2 ounces)

Sugar – 25 grams (0.9 ounces)

Baking Powder – 2 ½ teaspoons

Raisins – 40 grams (1.4 ounces)

Scones – An English Afternoon Tea is a quintessential British tradition, consisting of having tea in the afternoon, accompanied by savory and sweet foods.  Traditionally, it is reserved for special occasions, served in a formal drawing room between 4:00pm-5:00pm and includes finger sandwiches, freshly baked scones, elegant desserts and a selection of loose leaf teas served in fine china.  The traditional English scones have a round-shape, a slightly sweet flavor, a buttery texture and crumbly edges.  The shaved frozen butter added to the dough ensures the center of the scones is moist and flaky.  The freshly baked scones are eaten plain or served with fruit preserves.

Preparation Method

Step 1 – In a large bowl, combine the flour, sugar and the baking powder.  Shave the frozen butter into fluffy shreds with a box grater, using the large holes.  Add the shaved butter to the bowl and mix lightly with your hands until it has a crumbly texture.   

Step 2 – In a small bowl, whisk the egg and the sour cream, then combine with the flour mixture.  Add the raisins and make a slightly sticky dough.

Step 3 – Place the dough on a lightly floured surface and gently roll out the dough to a ¾ inch height.  Shape the scones into circles using the rim of a glass (2 inches diameter), then place them on the baking sheet.

Step 4 – Preheat the oven to 400 degrees Fahrenheit (205 Degrees Celsius) and bake the scones for 15 minutes until they have risen and have a slightly golden color.
